Warm Tea Smoked Salmon - One of Frangipani signature dish for 10 years. The salmon is smoked perfectly with Java tea leaf and Japanese rice and you can smell them when it is been served. Served with two confit potatoes with salmon roe on top, cut the salmon and get a bit of the creme fraiche and I promise you the salmon will 'swim away' in your mouth. A must-try dish when you visit Frangipani.
Three Tastes of Foie Gras - I can't tell you how it taste as I don't take foie gras. From the far left, it's the foie gras torchon with cinnamon peach jam and grilled brioche; follow by the pan fried foie fras served on top of the braised duck rillettes and palm sugar glaze; and the last one is the grilled foie gras "sate" and peanut sauce.
Seafood Risotto - I can still remember when the dish is served. You may see something 'dancing' on top of the dish (fish flaskes) and they are so beautiful. Served with grilled fresh water prawn, baby squid and emperor red snapper, dig into the nicely cooked risotto with the Bouillabaisse sauce and chew slowly...
Pan Seared Foie Gras- I can't tell you much about this dish as well as I only eat the potatoes mousseline which is among the best mash potatoes I have eaten. The beautiful brown line surrounding the outer of the mash is duck glaze and there is the crispy pigeon leg.
